Description

Delicious creamy mashed potatoes made with Yukon Gold potatoes, butter, cream cheese, and sour cream.


Ingredients

  • 5 pounds Yukon Gold potatoes
  • 1 cup chicken broth
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 tablespoons unsalted butter
  • 4 ounces cream cheese
  • 1/2 cup sour cream
  • Optional: fresh chopped chives

Instructions

  1. Peel and cube the Yukon Gold potatoes. Place them in a 6-quart crockpot with chicken broth, garlic, salt, and pepper.
  2. Cover and cook on High for 3 to 4 hours or Low for 6 to 7 hours until fork tender.
  3. Add butter, cream cheese, and sour cream directly into the crockpot.
  4. Mash everything together until creamy and smooth using a potato masher or hand mixer.
  5. Taste and adjust salt and pepper if needed. Add milk or broth to thin if desired.
  6. Serve warm, topped with extra butter and chopped chives if using.
