Description

A deliciously unique cake featuring strawberry cake mix with a creamy cream cheese swirl, complemented by fresh strawberries and white chocolate chips.

Ingredients

Scale
  • 1 box strawberry cake mix (plus ingredients listed on the box)
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 3 ½ cups powdered sugar
  • 1 cup sweetened shredded coconut
  • 1 cup white chocolate chips
  • 1 ½ cups fresh strawberries, chopped

Instructions

  1. Preheat and Prepare: Start by preheating your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper for easier cleanup.
  2. Mix the Cake Batter: Prepare the strawberry cake mix according to the instructions on the box. Pour the batter into the prepared baking dish and gently spread it out evenly.
  3. Make the Cream Cheese Swirl: In a separate bowl, beat together the softened cream cheese and butter until smooth. Gradually add the powdered sugar and mix until creamy and fluffy.
  4. Layer the Cake: Sprinkle the shredded coconut evenly over the strawberry cake batter. Then pour dollops of the cream cheese mixture across the surface. Use a knife or spatula to gently swirl the cream cheese mixture into the batter—this doesn’t need to be perfect!
  5. Add the Toppings: Sprinkle the chopped strawberries and white chocolate chips over the top. As the cake bakes, these toppings will sink slightly and create delicious pockets of flavor.
  6. Bake to Perfection: Bake the cake for 45–50 minutes or until the edges are golden and the center is set. You’ll notice the top will look cracked and marbled—that’s exactly what you want in a Strawberry Earthquake Cake.
  7. Cool and Serve: Let the cake cool in the pan for at least 15–20 minutes before slicing. This gives the flavors time to settle and makes cutting much easier.
