Ingredients

  • 1/2 cup butter (softened)
  • 3/4 cup powdered sugar (divided)
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • zest of 1 lemon
  • 1½ cups flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon lemon extract (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats. Set aside.
  2. Cream the butter and sugar: In the bowl of a stand mixer fitted with the paddle attachment—or a large mixing bowl using a hand mixer—beat the softened butter and ½ cup of powdered sugar together on medium speed for 1–2 minutes, until smooth and creamy.
  3. Add flavor: Scrape down the sides of the bowl, then add the lemon juice, lemon zest, and vanilla extract. Mix for another 30 seconds until well combined.
  4. Add dry ingredients: Scrape the sides again, then add the flour and salt. Mix on low until the dough comes together and is soft but not sticky.
  5. Shape the cookies: Scoop 1 tablespoon of dough, roll it into a ball, and flatten slightly with your fingers to about ½ inch thick. Cut the circle in half to form a “smile” shape and place on the prepared baking sheets. Repeat with remaining dough.
  6. Bake: Bake in the preheated oven for 10 minutes, or until the bottoms of the cookies are just lightly golden.
  7. Coat in sugar: Let cookies cool on the baking sheet for 10 minutes. While still slightly warm, roll each cookie in the remaining powdered sugar for that signature snowy finish.
  8. Cool completely before storing or serving.
