Description

A creamy and delicious rice pudding made with short-grain rice and mixed berries, perfect for a comforting dessert.

Ingredients

Scale
  • 1 cup short-grain rice (Arborio works well)
  • 4 cups whole milk (or almond milk for a lighter option)
  • 1/2 cup granulated sugar
  • 1 tsp pure vanilla extract
  • Pinch of salt
  • 1 cup mixed berries (fresh or frozen)

Instructions

  1. Rinse the rice under cold water until clear to remove excess starch.
  2. In a medium saucepan, combine rinsed rice and milk; heat over medium, stirring until it simmers.
  3. Stir in sugar, vanilla extract, and salt; reduce heat to low.
  4. Simmer uncovered for 25-30 minutes, stirring frequently until thickened.
  5. Gently fold in mixed berries and remove from heat.
  6. Serve warm or chill in the refrigerator before enjoying.

Notes

  • For a lighter option, use almond milk instead of whole milk.
