Description

This creamy orzo pasta dish with fresh spinach and a hint of lemon is a delightful meal for any occasion.


Ingredients

  • 1 cup orzo pasta
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 2 1/2 cups vegetable broth
  • 1/2 cup heavy cream
  • 2 cups fresh spinach
  • 1 lemon, juiced and zested
  • 1/3 cup grated Parmesan cheese
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat and sauté garlic for 30 seconds until fragrant.
  2. Add 1 cup orzo and toast for 1 minute, stirring constantly.
  3. Pour in 2 1/2 cups vegetable broth, bring to a simmer, and cook for 8 to 10 minutes, stirring often, until orzo is tender.
  4. Lower heat and stir in 1/2 cup heavy cream and fresh spinach, allowing spinach to wilt.
  5. Add lemon juice, lemon zest, Parmesan cheese, salt, and pepper, then stir until creamy and serve warm.
