- 1/2 teaspoon black pepper
- 1/4 teaspoon chili flakes (optional)
- 1 teaspoon fresh thyme or rosemary (chopped plus extra for garnish)
- 1 tablespoon lemon juice (optional, for garnish)
Instructions
- Prepare your ingredients by washing and dicing the sweet potatoes, onion, and garlic.
- Heat olive oil in a large skillet over medium heat. Sauté the onions until translucent (about 3-4 minutes).
- Add chicken thighs seasoned with salt, pepper, paprika, and cumin. Cook for 5-7 minutes on each side until browned.
- Stir in sweet potatoes and garlic. Cover the pan and cook for another 10-12 minutes until sweet potatoes are tender.
- Finish by adding fresh herbs and a splash of lemon juice before serving hot.
