Description

Delicious stuffed bell peppers filled with seasoned beef and rice, baked to perfection.


Ingredients

Scale
  • 1 lb ground beef
  • 1 large onion, chopped
  • 1 (28 oz) can tomato sauce, divided
  • 1¼ cups water, divided
  • 1 (1 oz) packet garlic & herb salad dressing mix
  • 1 cup uncooked minute rice
  • 4 large bell peppers, halved and seeded
  • ¼ teaspoon garlic powder
  • Salt and black pepper, to taste
  • Olive oil, for cooking
  • Optional: shredded mozzarella or cheddar cheese
  • Optional: fresh parsley or basil for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Heat olive oil in a skillet over medium heat. Cook ground beef and onion until browned.
  3. Add 1 cup tomato sauce, 1 cup water, and dressing mix. Bring to a boil.
  4. Stir in rice, cover, remove from heat, and let stand for 5 minutes.
  5. In a baking dish, mix remaining tomato sauce, water, garlic powder, salt, and pepper.
  6. Place pepper halves in the dish and fill with beef mixture.
  7. Cover with foil and bake for 35–40 minutes until peppers are tender.
  8. Optional: Add cheese during last 5 minutes of baking.
  9. Serve hot with extra sauce spooned over top.
