Description
Delicious stuffed bell peppers filled with seasoned beef and rice, baked to perfection.
Ingredients

- 1 lb ground beef
- 1 large onion, chopped
- 1 (28 oz) can tomato sauce, divided
- 1¼ cups water, divided
- 1 (1 oz) packet garlic & herb salad dressing mix
- 1 cup uncooked minute rice
- 4 large bell peppers, halved and seeded
- ¼ teaspoon garlic powder
- Salt and black pepper, to taste
- Olive oil, for cooking
- Optional: shredded mozzarella or cheddar cheese
- Optional: fresh parsley or basil for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Heat olive oil in a skillet over medium heat. Cook ground beef and onion until browned.
- Add 1 cup tomato sauce, 1 cup water, and dressing mix. Bring to a boil.
- Stir in rice, cover, remove from heat, and let stand for 5 minutes.
- In a baking dish, mix remaining tomato sauce, water, garlic powder, salt, and pepper.
- Place pepper halves in the dish and fill with beef mixture.
- Cover with foil and bake for 35–40 minutes until peppers are tender.
- Optional: Add cheese during last 5 minutes of baking.
- Serve hot with extra sauce spooned over top.
