Ingredients

- 3 large eggs
- 1/2 cup whole milk
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 2 tablespoons unsalted butter
Instructions
- Preheat the oven to 425°F and place 1/2 teaspoon butter in each of the 12 muffin cups. Set the tin in the oven to heat while it preheats.
- In a blender, combine eggs, milk, flour, salt, and vanilla extract. Blend until smooth and frothy.
- Carefully remove the hot muffin tin from the oven. Immediately pour the batter into each muffin cup, filling about halfway.
- Bake for 12 to 15 minutes, or until puffed and golden brown around the edges.
- Serve immediately with desired toppings. Pancakes will deflate slightly as they cool.
