- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 2/3 cup granulated sugar
- 1 cup full-fat Greek yogurt
- 1/3 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 teaspoon lemon zest (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, beat the eggs and sugar until light and slightly thickened.
- Add yogurt, oil, vanilla extract, and lemon zest (if using) to the egg mixture. Mix until smooth.
- Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.
- Pour batter into the prepared pan and smooth the top.
- Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Dust with powdered sugar or serve with yogurt and fresh berries.

- This cake can be served plain or with a dusting of powdered sugar on top.
