Description

A delicious shrimp and orzo dish with fresh spinach and garlic, perfect for a quick meal.


Ingredients

  • 1 pound shrimp
  • 1 cup orzo
  • 2 cups fresh spinach
  • 3 cloves fresh garlic, minced
  • 2 tablespoons fresh lemon juice
  • 3 tablespoons olive oil
  • 1/2 cup Parmesan cheese, grated

Instructions

  1. In a large pot, bring salted water to a boil. Add the orzo and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Increase the heat to medium-high and add the shrimp to the skillet. Season with salt and pepper, and cook for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, add another tablespoon of olive oil if needed, and toss in the fresh spinach. Sauté for 2-3 minutes until wilted.
  5. Return the cooked shrimp to the skillet with the spinach. Add the cooked orzo and the juice of one lemon. Toss everything together gently to combine.
  6. Remove from heat, sprinkle with grated Parmesan cheese, and garnish with fresh lemon slices and chopped parsley if desired.

Notes

  • For a spicier dish, add red pepper flakes along with the shrimp.
  • Can substitute spinach with kale if preferred.
  • Fresh herbs like parsley or basil can enhance the flavor.
