Description

Ingredients

  • 1 lb fresh carrots (peeled and cut into sticks)
  • 3 tbsp honey
  • 3 cloves garlic (minced)
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tsp fresh thyme (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the carrots; cut them into even-sized sticks.
  3. In a mixing bowl, whisk together honey, minced garlic, olive oil, salt, and pepper until smooth.
  4. Toss the carrots in the honey-garlic mixture until thoroughly coated.
  5. Spread the carrots on a parchment-lined baking sheet in a single layer.
  6. Roast for 25-30 minutes until tender and golden brown, stirring halfway through.
  7. Remove from the oven and sprinkle with fresh thyme before serving.
