- 1 lb fresh carrots (peeled and cut into sticks)
- 3 tbsp honey
- 3 cloves garlic (minced)
- 2 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- 1 tsp fresh thyme (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and peel the carrots; cut them into even-sized sticks.
- In a mixing bowl, whisk together honey, minced garlic, olive oil, salt, and pepper until smooth.
- Toss the carrots in the honey-garlic mixture until thoroughly coated.
- Spread the carrots on a parchment-lined baking sheet in a single layer.
- Roast for 25-30 minutes until tender and golden brown, stirring halfway through.
- Remove from the oven and sprinkle with fresh thyme before serving.
Notes
- For a variation, try adding other root vegetables.
- Make sure to cut the carrots evenly for even cooking.
