Description

Delicious homemade chocolate cupcakes topped with fluffy frosting.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup whole milk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup boiling water
  • 1/2 cup marshmallow fluff
  • 1/2 cup unsalted butter (softened)
  • 1 1/2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat sugar, eggs, milk, oil, and vanilla until smooth.
  4. Gradually add the dry ingredients to the wet, mixing until just combined.
  5. Stir in boiling water slowly. The batter will be thin, but that’s perfect.
  6. Fill cupcake liners 2/3 full and bake for 18–20 minutes or until a toothpick comes out clean.
  7. Let cupcakes cool completely before frosting.
  8. For the frosting, beat marshmallow fluff with softened butter until fluffy.
  9. Gradually add powdered sugar until smooth and pipeable.
  10. Frost cupcakes and optionally top with mini marshmallows or sprinkles.

Notes

  • Store in an airtight container for up to 3 days.
  • For extra flavor, add chocolate chips to the batter.
