Delicious homemade chocolate cupcakes topped with fluffy frosting.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup whole milk
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup boiling water
- 1/2 cup marshmallow fluff
- 1/2 cup unsalted butter (softened)
- 1 1/2 cups powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
- In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, beat sugar, eggs, milk, oil, and vanilla until smooth.
- Gradually add the dry ingredients to the wet, mixing until just combined.
- Stir in boiling water slowly. The batter will be thin, but that’s perfect.
- Fill cupcake liners 2/3 full and bake for 18–20 minutes or until a toothpick comes out clean.
- Let cupcakes cool completely before frosting.
- For the frosting, beat marshmallow fluff with softened butter until fluffy.
- Gradually add powdered sugar until smooth and pipeable.
- Frost cupcakes and optionally top with mini marshmallows or sprinkles.
Notes
- Store in an airtight container for up to 3 days.
- For extra flavor, add chocolate chips to the batter.
