Description

This delicious Ground Turkey Orzo is a comforting dish that combines savory ingredients and is easy to prepare.

Ingredients

Scale
  • 1 pound ground turkey
  • 1 cup orzo pasta
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 zucchini, diced
  • 2 cups vegetable or chicken broth
  • 1 can (14 oz) diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Cook Turkey: Add the ground turkey to the pot, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
  3. Sauté Vegetables: Add the diced onion, minced garlic, bell pepper, and zucchini to the pot. Sauté for 3-4 minutes until the vegetables are tender.
  4. Add Broth and Tomatoes: Pour in the vegetable or chicken broth and add the undrained diced tomatoes.
  5. Stir in Orzo: Add the orzo pasta, oregano, paprika, salt, and black pepper. Stir well to combine all ingredients.
  6. Bring to a Boil: Increase the heat to high and bring the mixture to a boil.
  7. Simmer: Once boiling, reduce the heat to low. Cover the pot and let it simmer for about 10-12 minutes, or until the orzo is cooked and has absorbed most of the liquid.
  8. Check Consistency: Stir occasionally to prevent sticking. If too dry, add a splash of broth or water.
  9. Garnish: Once cooked, remove from heat and let it sit for a few minutes. Garnish with fresh parsley before serving.
