Description
This delicious Ground Turkey Orzo is a comforting dish that combines savory ingredients and is easy to prepare.
Ingredients
Scale
- 1 pound ground turkey
- 1 cup orzo pasta
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 zucchini, diced
- 2 cups vegetable or chicken broth
- 1 can (14 oz) diced tomatoes, undrained
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Cook Turkey: Add the ground turkey to the pot, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
- Sauté Vegetables: Add the diced onion, minced garlic, bell pepper, and zucchini to the pot. Sauté for 3-4 minutes until the vegetables are tender.
- Add Broth and Tomatoes: Pour in the vegetable or chicken broth and add the undrained diced tomatoes.
- Stir in Orzo: Add the orzo pasta, oregano, paprika, salt, and black pepper. Stir well to combine all ingredients.
- Bring to a Boil: Increase the heat to high and bring the mixture to a boil.
- Simmer: Once boiling, reduce the heat to low. Cover the pot and let it simmer for about 10-12 minutes, or until the orzo is cooked and has absorbed most of the liquid.
- Check Consistency: Stir occasionally to prevent sticking. If too dry, add a splash of broth or water.
- Garnish: Once cooked, remove from heat and let it sit for a few minutes. Garnish with fresh parsley before serving.
