Description
A refreshing grilled chicken salad topped with a homemade tzatziki sauce.
Ingredients

- 4 boneless, skinless chicken breasts
- 3 cloves fresh garlic, minced
- 2 tsp dried oregano
- 1 cup firm cucumbers, diced
- 1 cup cherry tomatoes, halved
- ½ small red onion, thinly sliced
- 1 cup Greek yogurt
- 2 tbsp freshly squeezed lemon juice
- 2 tbsp extra virgin olive oil
- Salt & pepper to taste
Instructions
- Marinate the chicken: Mix olive oil, minced garlic, dried oregano, salt, and pepper in a bowl. Add chicken breasts and coat well. Let marinate for at least 30 minutes.
- Cook the chicken: Preheat grill or skillet over medium-high heat. Cook chicken for about 6-7 minutes per side until golden brown and cooked through. Let rest before slicing.
- Make tzatziki sauce: In a bowl, combine Greek yogurt with grated cucumber (squeeze out excess moisture), minced garlic, lemon juice, salt, and pepper. Mix until smooth.
- Prepare vegetables: Dice cucumbers and cherry tomatoes; slice red onion thinly.
- Assemble salad: Layer sliced chicken over mixed greens (e.g., spinach). Top with cucumbers, tomatoes, onion slices, and tzatziki sauce.
- Serve immediately with extra lemon wedges.
Notes
- For a spicier kick, add some red pepper flakes to the marinade.
- Letting the chicken marinate for longer will enhance the flavor.
