Description

A refreshing grilled chicken salad topped with a homemade tzatziki sauce.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 2 tsp dried oregano
  • 1 cup firm cucumbers, diced
  • 1 cup cherry tomatoes, halved
  • ½ small red onion, thinly sliced
  • 1 cup Greek yogurt
  • 2 tbsp freshly squeezed lemon juice
  • 2 tbsp extra virgin olive oil
  • Salt & pepper to taste

Instructions

  1. Marinate the chicken: Mix olive oil, minced garlic, dried oregano, salt, and pepper in a bowl. Add chicken breasts and coat well. Let marinate for at least 30 minutes.
  2. Cook the chicken: Preheat grill or skillet over medium-high heat. Cook chicken for about 6-7 minutes per side until golden brown and cooked through. Let rest before slicing.
  3. Make tzatziki sauce: In a bowl, combine Greek yogurt with grated cucumber (squeeze out excess moisture), minced garlic, lemon juice, salt, and pepper. Mix until smooth.
  4. Prepare vegetables: Dice cucumbers and cherry tomatoes; slice red onion thinly.
  5. Assemble salad: Layer sliced chicken over mixed greens (e.g., spinach). Top with cucumbers, tomatoes, onion slices, and tzatziki sauce.
  6. Serve immediately with extra lemon wedges.

Notes

  • For a spicier kick, add some red pepper flakes to the marinade.
  • Letting the chicken marinate for longer will enhance the flavor.
