A refreshing salad combining grated carrots with a vibrant herb dressing.
Ingredients

- 1 lb grated carrots
- 1/2 white onion, chopped
- 2 cloves garlic, minced
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons apple cider vinegar
- 1 teaspoon ground cumin
- 3 tablespoons fresh cilantro, chopped
- 3 tablespoons fresh flat-leaf parsley, chopped
- Salt and pepper to taste
Instructions
- Chop the onion finely and soak in cold water for 15 minutes to mellow its flavor. Drain and pat dry.
- In a food processor, combine soaked onion, minced garlic, olive oil, apple cider vinegar, and cumin. Pulse until slightly chunky.
- In a large bowl, combine grated carrots with the dressing mixture and add chopped cilantro and parsley. Toss until evenly coated. Season with salt and pepper before serving.
Notes
- This salad can be served immediately or refrigerated for 30 minutes to enhance the flavors.
