Description

A refreshing salad combining grated carrots with a vibrant herb dressing.


Ingredients

  • 1 lb grated carrots
  • 1/2 white onion, chopped
  • 2 cloves garlic, minced
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon ground cumin
  • 3 tablespoons fresh cilantro, chopped
  • 3 tablespoons fresh flat-leaf parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Chop the onion finely and soak in cold water for 15 minutes to mellow its flavor. Drain and pat dry.
  2. In a food processor, combine soaked onion, minced garlic, olive oil, apple cider vinegar, and cumin. Pulse until slightly chunky.
  3. In a large bowl, combine grated carrots with the dressing mixture and add chopped cilantro and parsley. Toss until evenly coated. Season with salt and pepper before serving.
