- 2 pounds beef roast (chuck or top sirloin)
- 1 tablespoon olive oil
- 1 onion, sliced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 12 slider buns
- 12 slices provolone cheese
- Fresh parsley for garnish (optional)
Instructions
- Season the beef roast with salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Sear the beef on all sides until browned (about 3-4 minutes per side).
- Once seared, remove the beef from the skillet. In the same skillet, add the sliced onion and minced garlic. Sauté until they are soft and fragrant.
- Place the beef back into the skillet. Pour in the beef broth and add Worcestershire sauce and dried thyme.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 2 hours, or until the beef is tender and easily shredded.
- Once cooked, remove the beef from the skillet and let it rest for a few minutes. Shred the beef using two forks.
- Strain the broth to remove onion and garlic bits. Return the strained broth to the skillet and keep it warm.
- Preheat your oven to 350°F (175°C). Slice the slider buns in half. Place the bottom halves of the buns on a baking sheet.
- Layer shredded beef evenly on the bottom halves of the slider buns. Top each with a slice of provolone cheese.
- Place the top halves of the buns on the sliders. Cover with aluminum foil and bake for 15 minutes until the cheese is melted and the buns are warm.
- Remove from the oven. Serve the sliders warm with a side of the warm au jus for dipping.
