- 1 lb ground beef (substitute ground turkey or chicken for a leaner option)
- 1 tbsp olive oil
- ½ tsp fine sea salt (to taste)
- ¼ tsp pepper (to taste)
- ½ onion, finely diced
- 1 carrot, julienned or grated
- 3 garlic cloves, minced
- 3 cups cabbage, thinly sliced (green or napa cabbage)
- 1 tsp ground ginger
- ¼ cup low sodium soy sauce
- 2 tsp sesame oil
- ½ tsp granulated sugar
- 1 tbsp chopped green onion (optional for garnish)
- ¼ tsp sesame seeds (optional for garnish)
Instructions
- In a large skillet, heat olive oil over medium-high heat. Add ground beef and season with salt and pepper. Cook until browned, breaking it up with a spatula.
- Once the beef is browned, add diced onion and grated carrots. Sauté for 5-7 minutes until softened.
- Stir in minced garlic and cook for an additional 30 seconds until fragrant.
- Add sliced cabbage, ground ginger, soy sauce, sesame oil, and sugar. Stir to combine. Continue sautéing for 5-7 minutes until cabbage softens but still retains a slight crunch.
- Remove from heat and garnish with green onions and sesame seeds, if desired.
- Serve immediately, optionally with rice, noodles, or a fresh salad.

- For a lighter option, substitute chicken or turkey for the ground beef.
