- 3–4 boneless, skinless chicken breasts
- 1 cup pineapple chunks (fresh or canned)
- 1/4 cup low-sodium soy sauce
- 1/4 cup brown sugar
- 3 cloves fresh garlic, minced
- 1 red bell pepper, sliced thinly
- 3 green onions, chopped for garnish
- 1 cup pineapple juice (fresh if available)
- 1 tbsp cornstarch mixed with 2 tbsp water (for thickening)
Instructions
- Prepare your ingredients by chopping the vegetables and slicing the chicken into even pieces.
- In the crockpot, layer the chicken breasts at the bottom followed by pineapple chunks, red bell pepper, garlic, brown sugar, and soy sauce.
- Pour pineapple juice over the mixture; gently stir to combine without disturbing the layers too much.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
- In the last 30 minutes of cooking, mix cornstarch with water and stir into the pot to thicken the sauce.
- Once cooked, shred the chicken or serve whole with a sprinkle of green onions on top. Enjoy with rice or noodles.
