Description

A deliciously layered cake with mixed berries and cream.


Ingredients

  • 1 sponge cake (store-bought or homemade)
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1 cup heavy cream
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tbsp gelatin powder
  • 1 sheet parchment paper for lining

Instructions

  1. Line a round springform pan with parchment paper.
  2. Prepare the sponge cake according to package instructions or your favorite recipe; heat gently until fully dissolved, then mix into whipped cream.
  3. Fold in mixed berries gently to maintain their shape.
  4. Layer half of the berry mixture over the sponge cake in the prepared mold, add another layer of sponge cake, then top with remaining berry mixture. Smooth the top.
  5. Chill in the refrigerator for at least four hours or overnight before serving.
