A deliciously layered cake with mixed berries and cream.

- 1 sponge cake (store-bought or homemade)
- 2 cups mixed berries (strawberries, blueberries, raspberries)
- 1 cup heavy cream
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1 tbsp gelatin powder
- 1 sheet parchment paper for lining
Instructions
- Line a round springform pan with parchment paper.
- Prepare the sponge cake according to package instructions or your favorite recipe; heat gently until fully dissolved, then mix into whipped cream.
- Fold in mixed berries gently to maintain their shape.
- Layer half of the berry mixture over the sponge cake in the prepared mold, add another layer of sponge cake, then top with remaining berry mixture. Smooth the top.
- Chill in the refrigerator for at least four hours or overnight before serving.
Notes
- For best results, use fresh berries.
- Can be made a day ahead of serving for enhanced flavor.
