Creamy Garlic Salmon with Spinach

Description

A delicious and creamy salmon dish cooked with garlic, sun dried tomatoes, and fresh spinach.


Ingredients

Scale
  • 4 6 oz salmon fillets
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 4 cloves garlic minced
  • 1 small onion chopped
  • 1/3 cup sun dried tomatoes chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 2 cups fresh spinach
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Season 4 salmon fillets with salt and black pepper.
  2. Heat 2 tablespoons olive oil in a large skillet over medium heat and sear salmon for 4 minutes per side until golden then remove and set aside.
  3. In the same skillet melt 3 tablespoons butter then add chopped onion and cook for 3 minutes until soft.
  4. Stir in 4 cloves minced garlic and 1/3 cup sun dried tomatoes cooking until fragrant.
  5. Pour in 1/2 cup chicken broth and simmer for 2 minutes scraping the pan.
  6. Slowly add 1 cup heavy cream stirring until smooth and slightly thickened.
  7. Add 2 cups fresh spinach and cook until wilted.
  8. Return salmon to the skillet spooning sauce over the top and simmer for 3 minutes until cooked through.
