Description
A delicious and creamy salmon dish cooked with garlic, sun dried tomatoes, and fresh spinach.
Ingredients

- 4 6 oz salmon fillets
- 2 tablespoons olive oil
- 3 tablespoons butter
- 4 cloves garlic minced
- 1 small onion chopped
- 1/3 cup sun dried tomatoes chopped
- 1 cup heavy cream
- 1/2 cup chicken broth
- 2 cups fresh spinach
- Salt to taste
- Black pepper to taste
Instructions
- Season 4 salmon fillets with salt and black pepper.
- Heat 2 tablespoons olive oil in a large skillet over medium heat and sear salmon for 4 minutes per side until golden then remove and set aside.
- In the same skillet melt 3 tablespoons butter then add chopped onion and cook for 3 minutes until soft.
- Stir in 4 cloves minced garlic and 1/3 cup sun dried tomatoes cooking until fragrant.
- Pour in 1/2 cup chicken broth and simmer for 2 minutes scraping the pan.
- Slowly add 1 cup heavy cream stirring until smooth and slightly thickened.
- Add 2 cups fresh spinach and cook until wilted.
- Return salmon to the skillet spooning sauce over the top and simmer for 3 minutes until cooked through.

- Serve with a side of pasta or rice for a complete meal.
