- 2 large eggs
- 1 cup all purpose flour
- 3 tablespoons olive oil
- 3 tablespoons butter
- 1 cup chicken broth
- 1 lemon, juiced
- Salt to taste

Instructions
- Slice 2 large chicken breasts horizontally into thin cutlets and season both sides with salt and black pepper for even flavor and cooking.
- Place 1 cup all purpose flour in a shallow bowl and whisk 2 large eggs in another bowl until smooth and ready for coating.
- Dredge each chicken cutlet in flour, shaking off excess, then dip fully into the beaten eggs to create the signature coating.
- Heat 3 tablespoons olive oil in a large skillet over medium heat and cook chicken for 3 to 4 minutes per side until golden and cooked through, then remove and keep warm.
- Reduce heat and add 3 tablespoons butter to the same skillet, letting it melt. Then pour in 1 cup chicken broth and lemon juice, scraping the pan to build flavor.
- Return chicken to the skillet and simmer for 2 minutes, spooning sauce over the top so it absorbs flavor before serving with parsley.
