- 2 medium zucchinis (grated)
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup granulated sugar
- 1/2 cup brown sugar (light)
- 1 tsp baking soda
- 1 tsp baking powder
- 1/4 tsp salt
- 2 large eggs
- 1/2 cup vegetable oil
- 1 tsp vanilla extract
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Grate the zucchinis and squeeze out excess moisture.
- In a bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
- In another bowl, mix granulated sugar, brown sugar, eggs, oil, and vanilla until smooth.
- Gradually combine dry ingredients with wet ingredients until just blended.
- Fold in grated zucchini and optional chocolate chips.
- Pour batter into the prepared pan and bake for 50-60 minutes or until a toothpick comes out clean.
- Let cool before slicing.
Notes
- Make sure to squeeze out as much moisture from the grated zucchini as possible to avoid a soggy loaf.
- This bread can be stored in an airtight container for up to a week.
