These chocolate sandwich cookies are filled with a creamy vanilla buttercream filling, perfect for any occasion!

- 1 cup unsalted butter
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 3/4 cups all-purpose flour
- 3/4 cup Dutch-process cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter (softened)
- 1 3/4 cups powdered sugar
- 2 tablespoons heavy cream
- 1/2 teaspoon vanilla extract (or almond/peppermint, optional)
Instructions
- Beat the butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract and mix until smooth.
- In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
- Gradually mix the dry ingredients into the wet mixture until a dough forms.
- Chill the dough in the refrigerator for 30 minutes.
- Preheat oven to 350°F (175°C). Scoop dough into balls and place on a parchment-lined baking sheet.
- Bake for 8–10 minutes until just set. Let cool completely.
- In a new bowl, beat butter and powdered sugar for the filling. Add cream and vanilla, beat until fluffy.
- Spread or pipe the filling onto half the cookies and sandwich with the remaining halves.
- Store in an airtight container. Enjoy!
