A rich and creamy chocolate mousse that’s perfect for any occasion.
Ingredients

- 200 g dark chocolate
- 1 cup heavy cream
- 3 egg yolks
- 3 tbsp granulated sugar
- 2 tbsp unsalted butter
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Chop the dark chocolate and place it with butter in a heatproof bowl.
- Heat the heavy cream until just simmering then pour over the chocolate and whisk until smooth.
- Whisk egg yolks with sugar then temper with warm chocolate mixture before combining fully.
- Add vanilla and salt and let the mixture cool slightly.
- Whip remaining cream to soft peaks and gently fold into the chocolate base using a spatula.
- Divide the mousse into cups, smooth the tops, and chill for at least 2 hours before serving.

- For a lighter mousse, ensure the whipped cream is folded gently.
- You can garnish with chocolate shavings or berries before serving.
