Description

This rich and decadent chocolate layer cake is perfect for special occasions and celebrations.


Ingredients

  • ½ cup butter (softened)
  • 1 cup brown sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 3 ounces unsweetened chocolate (melted)
  • 2 cups all-purpose flour
  • ¼ cup cornstarch
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • 1 cup sour cream
  • 1 cup water
  • 2 cups heavy cream
  • 1½ teaspoon vanilla extract
  • 24 tablespoons powdered sugar

Instructions

  1. Preheat oven to 350°F. Grease and flour two 8-inch cake pans or line with parchment.
  2. Beat butter and brown sugar until light and fluffy, about 1 to 2 minutes.
  3. Add eggs one at a time, then mix in vanilla and melted chocolate.
  4. In a separate bowl, whisk flour, cornstarch, baking soda, salt, and baking powder.
  5. Slowly mix dry ingredients into the wet batter, alternating with sour cream and water, until smooth.
  6. Divide batter evenly between pans and bake 25-30 minutes, or until a toothpick comes out clean.
  7. Cool completely. Once cooled, carefully slice each cake horizontally to create 4 thin layers total.
  8. Chill a mixing bowl for 15 minutes, then whip cream until soft peaks form. Add vanilla and powdered sugar, and continue whipping until light and fluffy.
  9. Spread whipped cream between each cake layer and stack. Frost the top and sides if desired.

  • This cake can be served with additional whipped cream or chocolate ganache for added richness.
