- 2 large russet potatoes (or frozen fries)
- 1 pound boneless, skinless chicken breasts
- 1 cup buffalo sauce (store-bought or homemade)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
- 1 cup shredded cheddar cheese
- ½ cup ranch dressing or blue cheese dressing
- Chopped green onions or parsley, for garnish
Instructions
- If using fresh potatoes, wash and peel them. Cut them into fries or wedges.
- Soak the Potatoes: Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.
- Cook the Chicken: In a skillet, heat olive oil over medium heat. Season the chicken with salt, pepper, garlic powder, and onion powder. Cook for about 7-10 minutes per side until fully cooked. Remove from heat and shred the chicken with two forks.
- Add Buffalo Sauce: Toss the shredded chicken in buffalo sauce until evenly coated.
- Prepare the Fries: Preheat your oven to 425°F (220°C). If using fresh potatoes, drain and pat them dry. Spread them out on a baking sheet. Drizzle with olive oil, season with salt and pepper, and toss to coat.
- Bake the Fries: Bake the fries in the preheated oven for about 30-35 minutes, turning halfway through, until they are crispy and golden brown.
- Assemble the Dish: Once the fries are done, layer them on a serving platter. Top with the buffalo chicken and sprinkle shredded cheddar cheese on top.
- Melt the Cheese: Return the assembled platter to the oven for 2-3 minutes, just until the cheese melts.
- Add the Finishing Touches: Drizzle ranch or blue cheese dressing over the top and garnish with chopped green onions or parsley.

- For an extra kick, use spicy buffalo sauce.
- Frozen fries can also be used for a quicker preparation.
