Apple Cider Donuts

Description

Delicious homemade apple cider donuts filled with sweet apple pie filling and coated in cinnamon sugar.


Ingredients

  • 1 1/4 cup diced gala apples (about 23 medium apples)
  • 1 ½ tbsp salted butter (for filling)
  • 3 tbsp brown sugar (for filling)
  • 1 tsp apple pie spice (for filling)
  • 1 tbsp all purpose flour (for filling)
  • 1 ½ cups all purpose flour (for donuts)
  • 1 ½ tsp baking powder (for donuts)
  • ½ tsp baking soda (for donuts)
  • ¾ cup brown sugar (for donuts)
  • 2 eggs (for donuts)
  • ¾ cup low fat buttermilk (for donuts)
  • 3 tbsp salted butter, melted (for donuts)
  • 1 tsp vanilla extract (for donuts)
  • 1 tsp apple pie spice (for donuts)
  • ¼ cup white granulated sugar (for topping)
  • 1 tbsp cinnamon (for topping)
  • 2 tbsp salted butter, melted (for topping)

Instructions

  1. For the apple pie filling, peel, core, and dice the apples.
  2. In a sauce pot over medium heat, add butter and sugar, mixing well.
  3. Add diced apples, flour, and apple pie spice, then mix well and cover. Lower the heat to medium-low and cook until the apples are softened, stirring every few minutes.
  4. Remove from heat and let cool.
  5. Preheat oven to 350℉ and grease a donut pan.
  6. In a large mixing bowl, whisk together eggs, sugar, buttermilk, melted butter, and vanilla until smooth.
  7. Sift in all dry ingredients and whisk until fully incorporated.
  8. Add the cooled apple pie filling mixture and mix well using a spatula.
  9. Transfer the batter into a piping bag.
  10. Cut the tip off the piping bag and fill the donut cups, then bake for 11-12 minutes.
  11. Let donuts cool on a wire rack.
  12. For the cinnamon sugar topping, melt butter and mix sugar and cinnamon in a shallow bowl.
  13. Brush the top of each donut with butter and dip into the cinnamon sugar mixture. Repeat with all donuts.

Notes

  • Make sure not to overfill the donut cups to allow for proper rising.
  • Feel free to substitute other types of apples if preferred.
